Tomori Sake Brewery believes that true local sake can only be produced using ``local rice, local water, local climate and natural features.''
Akaiwa City, where the sake brewery is located, has long been known as a producer of the highest quality sake rice (Omachimai), a rice suitable for sake brewing. ``Omachi rice'', which grows up to 160 cm in height and is sensitive to water, is difficult to cultivate and has low yields, so production decreased with the modernization of agriculture (mechanization), and it eventually became a ``mysterious rice.''
Our current president, Tadayoshi Toshimori, is the person who revived this ``mysterious rice'', ``Omachi Rice.''
Our company provided farmers with an income guarantee and took on the risks to start cultivating Omachi Rice. Later, we established the High Quality Rice Promotion Council, which brought together sake breweries, farmers, agricultural cooperatives, agricultural experimental stations, and the government to cultivate Omachi Rice. We have revived "Machi Rice" today.
The Daiginjo sake ``Akaiwa Omachi'', which uses the revived ``Omachi rice'', became known throughout the country as ``Omachi rice'' along with the name ``Akaiwa Omachi'', and is still known as ``Omachi rice'' to this day. It has gained wide popularity both in Japan and abroad as ``Omachi Rice Sake''. Nowadays, the number of ``Omachi fans'' called ``Omachists'' is also increasing.
In recognition of these efforts, in January 2020, Tadayoshi Toshimori received the prestigious Sanyo Shimbun Award.

Tomori Sake Brewery, which is dedicated to sake, wants people to know more about sake, and the process from rice to sake becomes one through the mutual influence of humans, the environment, and time. The appearance was a part of my work. My works are not created solely by my own will, but are created through the interaction of materials, tools, and the environment.From a distance, I am also influenced by the light and gravitational pull of the sun and moon from space. I work every day with the awareness that it continues to influence us. I believe that preserving tradition and finding new methodologies from tradition are the first steps towards a more developed future.

I feel that an effective chemical reaction occurred by engaging with completely different genres. We would be extremely happy if you could enjoy this collaborative work through all five senses. We would like to express our gratitude to everyone involved.    May 2021  Kim Hyo-yan
